Eugène-Aimé Salon, who had become rich through fur trade, acquired in 1911 a hectare of best Champagne Crus of the wine region Champagne. His goal was to produce the best possible champagne for himself and his guests. The basis for this was the site "Le Mesnil", the terroir of the "Côte des Blancs", and the best grape variety Chardonnay in his opinion. After vinifying exclusively for his own needs at first, he commercialized his vintage champagne from 1921 on. Salon exclusively produces Blanc de Blancs Champaner wines in selected years as a cuvee. In the 20th century, 37 Vintages destined for this. The own vineyard property in Le Mesnil contributes only about one sixth of the grape production to the extraction of base wines, the rest is bought on the strongly regulated market for champagne base wine. As already at the beginning of the production, great importance is still attached to quality-oriented cellar management. The legally stipulated minimum storage time of three years for vintage champagnes is clearly exceeded. As a rule, the products are only put on the market after ten years, which of course requires corresponding storage capacities and causes a high capital commitment. Since 1988, Champagne Salon has been part of the Laurent-Perrier trading group.
