Contemplative

Ripe

"Maturation" refers to the state of the champagne after a certain period of ageing. In general, ageing means that the champagne has developed in a way that has deepened its flavours and complexity. Maturation can be influenced by various factors, including the length of storage, the conditions of the storage room and the type of champagne itself.

Mature champagne often displays a balanced blend of freshness and depth. The fruity notes can evolve into more complex flavours such as honey, roasted nuts or baked apples. The texture of mature Champagne is often creamier and the acidity can appear milder as it has been softened by time. Ageing can also influence the perlage, the bubbles in Champagne, by making it finer and longer lasting.

In Champagne, vintage champagnes are particularly known for their ageing, as they are often stored longer in the cellars and can therefore develop even greater complexity and depth. Mature Champagne is often considered to be particularly valuable as it has the ability to evolve over the years and offer new flavour sensations.

Perlage

"Perlage" describes the quality of the bubbles in champagne. It is a French term that refers to the fine, constant bubbles observed in a well-made champagne. These bubbles are created by the secondary fermentation that takes place in the bottle and are a sign of the quality and style of the champagne.

The perlage of a champagne can have different characteristics, including the size, duration and intensity of the bubbles. A high-quality champagne often has a very fine, long-lasting perlage that is characterised by a delicate, elegant bubble formation. These fine bubbles are an indicator of long maturation and careful production of the champagne.

The way the perlage develops in the glass can also reveal a lot about the freshness and texture of the champagne. A continuous and even perlage is often a sign of a high quality champagne and contributes to the overall enjoyment experience by providing a refreshing and lively texture.
