Also known as Brut Nature or Non-Dosé, is a category of Champagne known for its exceptional purity and intensity. This type of Champagne is bottled without additional dosage, i.e. without the addition of sugar, after the second fermentation. This gives it a particularly dry flavour profile and an honest reflection of the terroir from which it comes.

The term "Brut" refers to the level of sweetness in the champagne, with "Zero" or "Nature" meaning that no additional sweeteners have been added. Traditionally, Champagne is given a dosage, a mixture of wine and sugar, after the second fermentation in the bottle to even out the flavour and improve the balance. With Brut Zero, this step is omitted, meaning that the champagne relies entirely on the natural flavours and acidity.

The production

The production of Brut Zero is an art in itself. The wines must be of exceptional quality, as the lack of sugar cannot conceal any irregularities in flavour. Winemakers must therefore pay particular attention to the balance between acidity and fruit. Often only the best vintages or top vineyards are used for Brut Zero cuvées. The acidity structure of these champagnes is particularly pronounced, giving them an invigorating freshness and often revealing complex flavours of citrus fruits, green apples and mineral notes.

Brut Zero champagne offers an unadulterated representation of champagne. The decision to dispense with sugar allows the character and structure of the grapes and the terroir to be emphasised more strongly. This can result in a champagne that is both elegant and powerful, with a clear definition and deep, nuanced flavours.

Another important aspect of Brut Zero is ageing. As these champagnes contain no added sugar, ageing over longer periods can play an important role in further developing the complexity and depth of flavours. Often, prolonged ageing reveals a remarkable evolution, with additional notes of brioche, nuts and honey harmoniously combining with the original freshness and acidity.
