The vines: The basis of champagne

Calcareous soils are particularly favourable for the vines as they provide good drainage and retain heat, which helps the grapes to reach optimum ripeness.

Vine care and harvest

Caring for the vines is a demanding process. Winegrowers in Champagne must ensure that the vines remain healthy and that the grapes ripen evenly. This requires regular monitoring of the vines for diseases and pests as well as precise thinning to improve the quality of the grapes. The harvest usually takes place between September and October. The grapes must be harvested at the optimum point of ripeness to ensure the right balance between sugar and acidity.

Vinification and blending

After the harvest, the grapes are pressed and the juice fermented. The first fermentation process takes place in stainless steel tanks or wooden barrels. This is followed by the second fermentation in the bottle, which gives the champagne its characteristic bubbles. The method used in Champagne is the "Méthode Champenoise" or "Méthode Traditionnelle". An important step in this process is "blending", in which wines from different vintages and grape varieties are mixed to achieve the desired flavour and complexity of the champagne.
