The vignoble, or vineyard, plays a central role in the production of Champagneone of the most renowned sparkling wines in the world. The region where Champagne is produced is the Champagne region in north-east France. Due to its unique climatic conditions, soils and grape varieties, this region is particularly suitable for the production of this luxurious drink.

Geography and climate

The Champagne region covers around 34,000 hectares and is divided into five main growing areas: Montagne de Reims, Vallée de la Marne, Côte des Blancs, Côte de Sézanne and Aube. These regions are decisive for the quality of Champagne, as the geological and climatic conditions have a profound influence on the taste and structure of the wine.

The climate in Champagne is rather cool and continental, which means that temperatures can drop sharply in winter and are relatively mild in summer. These climatic conditions are ideal for growing grapes, as the cold helps to preserve the acidity in the grapes, which is important for the wine. Sparkling wine is of great importance. The cool weather also ensures that the vines ripen more slowly, which gives the grapes a fine balance between sugar and acidity.

Soils and terroir

The terroir, i.e. the combination of soil composition, climate and human influence, is particularly important for Champagne. In Champagne, the soils consist mainly of limestone and chalk, which have excellent drainage properties. These soils reflect sunlight and retain moisture, which helps the vines to produce healthy grapes. Limestone soils are particularly favourable because they provide good aeration for the roots of the vines and at the same time promote the mineral character of the Champagne.

Grape varieties

Three main grape varieties are cultivated in the Champagne region: Chardonnay, Pinot Noir and Pinot Meunier. Each of these varieties brings its own flavours and characteristics to Champagne. Chardonnay grapes, which are mainly grown in the Côte des Blancs, give the champagne an elegant freshness and fine citrus flavours. Pinot Noir, which is mainly found in the Montagne de Reims and the Côte des Bar, provides structure and complexity with flavours of red fruits and spices. Pinot Meunier, which is mainly found in the Vallée de la Marne, brings fruity and round notes to the champagne.

Harvesting and processing

The grape harvest in the Champagne region usually takes place between the end of September and the beginning of October. The harvest time is crucial to achieve the perfect ripeness of the grapes. The grapes are picked by hand to ensure that only the best fruit is selected. This careful process is important as the quality of the grapes directly influences the flavour of the champagne.

After the harvest, the grapes are pressed and the juice is fermented in large stainless steel tanks or wooden barrels. The first fermentation process leads to the formation of the base wine, which is then further processed for the production of champagne. A crucial step in champagne production is the second fermentation in the bottle, which produces the carbon dioxide that gives the champagne its effervescent texture.

Champagne production

The method of Champagne production is known as the "Méthode Champenoise". This traditional method involves a second fermentation in the bottle, during which a mixture of sugar and yeast is added to produce the carbon dioxide. After this fermentation, the champagne matures on the lees for several years, resulting in a complex flavour and a fine perlage.

After ageing, the champagne is disgorged, i.e. the yeast is removed from the bottle, and the champagne is brought to the desired degree of sweetness with a dosage, a mixture of wine and sugar.
