The estate of the exclusive champagne house Ayala is located just a few kilometers south of Reims in the town of Aÿ. The business idea was ignited, as so often in life, by a love story. Raphael Edmond Louis Gonzague de Ayala, son of a Colombian diplomat, married the love of his life in Aÿ, in the heart of Champagne. Closely attached to the region, he acquired vineyards there and founded the house Ayala in 1860. After several changes of ownership during its almost 150-year history, Ayala has belonged since 2005 to the Bollinger family group, which has since enriched the development of this traditional company with new impulses. The chalky ground on which Champagne Ayala is founded also plays a decisive role in the success of the brand. On the hills around Reims, the Montagne de Reims and the Côtes de Blancs, Pinot Noir, Pinot Meunier and Chardonnay ripen in a harmonious triad of climate, soil and care. The chalky soil provides the natural basis for the unique character of the champagne. A skilful blend of cuvée rounds off this impression. Ayala also has a three-kilometer network of cellars located 20 to 25 meters below a vineyard in the chalk layer, providing the best conditions for the long maturation of these champagnes.
In 2005, the family Bollinger bought the beautiful property with the intention to give it back its original strength: For Champagne AYALA a period of renewal began, with a complete renewal of the production tools and the arrival of new teams. Today the house employs about fifteen people and preserves the family spirit of its origins.
Independent and family-owned, Ayala still stands for high quality champagne, which is enjoyed worldwide and is known for its elegance and freshness.
